Cat Shimizu, the “breaducator" from Sour Flour — a Mission District
bakery dedicated to neighborly bread gifting and bread education— will
teach the art and science of making bread using a sourdough starter.
She will focus on how to create a starter using flour and water, and
discuss how different factors, i.e. time, temperature, and hydration,
affect the fermentation process. By learning how to feed and take care
of your starter, you will understand how to use it to bake bread.
